Completely agree, but wouldn't you say that any recording chain, especially the mic, has the potential to change the sound of the instrument? In that case, wouldn't you like to be able to chose the equipment that gives you the sound you want? I am assuming the engineer works with the artist, and not on a vacuum.

"Potential to change the sound" sounds to me like a more of an anxiety thing, anxiety of infinite "possibilities" and it all being out of one's control ... The comfort then found in ignoring trying to capture something intended and instead only following ones own whim and good feeling in the moment.
I could agree with the first part of your post . but how much potential has each individual mic to change the sound if you've been successful in using that mic many times before in a way that sounded essentially transparent and like the sound in the room?
The brain filters so much of what we hear with our ears, that the sound a mic picks up is never what we actually hear .. rarely do our brains hear the sound of the room unless we specifically focus on it, for example, but when you listen to what a mic is picking up, the room is immediately apparent.
