Makes more sense if you watch further into the demo video - that center space gets used for lots of individual FX manipulations of the sounds. The controls in the middle appear & disappear as needed. The single screenshot they've provided here really isn't doing it justice, they should have shared a couple more.

I'm guessing there's a Kontakt technical limitation that the dialog needs to be one fixed size, and they've had to choose a larger size that accommodates all the various control modes.
